Raspberry Black Forest with Nutella®
Ingredients (15 pieces):
- 6 eggs (at room temperature)
- 180g sugar
- 180g flour
- 35g cocoa powder
- 85 g suiker
- 1 tsp baking powder
Filling:
- 450g of raspberries
- 225g Nutella®
PREPARATION:
- Mix flour, baking powder, and cocoa powder in a bowl.
- Beat eggs and sugar over a bain-marie with an electric mixer until the mixture reaches 45°C, then whisk off the heat until cool, pale, and frothy.
- Gently fold in the dry ingredients without breaking the mixture’s consistency.
- Use a spatula to finish mixing and fill 7 cm molds halfway.
- Bake for 10–15 minutes, watching closely depending on mold size.
- Meanwhile, crush raspberries and strain the juice into a bowl.
- Let cakes cool, then cut in half horizontally.
- Spread 7.5g Nutella® on the bottom halves, top with raspberries, cover with the other halves, and spread the remaining Nutella® on top.
- Optionally, finish with fresh raspberries.
